How one last idea turned into our newest breakfast item

We thought our Tavva breakfast menu was complete.
We already had two sweet breakfast options and two savory ones:
our Pastry Cream Parfait, Ricotta Pancakes, Eggs in Purgatory, and Bacon & Egg Breakfast Sandwich.
Then last week, Tyler randomly asked:
“What about putting an omelette on the menu?”
If you know Tyler, this made perfect sense. Omelettes are what he always orders when we go out for breakfast. He loves having a high-protein, lower-carb breakfast option.
I immediately loved the idea.
The only problem? Omelettes are French, and I wanted to stay true to the Italian direction of the Tavva menu.
That’s when I started thinking about frittatas.
A Frittata is a traditional Italian egg dish that’s similar to an omelette, but with a more rustic, Italian-style approach. So I started experimenting with one using some of our favorite Tavva ingredients:
Italian sausage, ricotta, parmesan, sun-dried tomatoes, diced tomatoes, basil, arugula, and balsamic glaze.
And honestly… it turned out even better than I expected.
The texture is soft and creamy, the flavors feel fresh and savory without being heavy, and it ended up being the perfect addition to round out the breakfast menu.
It also gives us another great gluten friendly breakfast option, which I think a lot of customers are going to be excited about.
