What happens when Italian ingredients meet an American breakfast sandwich

A note from Val: How this sandwich came together

When we started developing Tavva’s breakfast menu, I knew I didn’t want to add a breakfast sandwich just because it felt expected. There are plenty of drive-thru breakfast sandwiches out there, and most of them taste pretty much the same.

So instead of starting with “What kind of breakfast sandwich should we make?”, I started with the ingredients and flavors we already loved.

Our focaccia bread. The roasted garlic spread. The sun-dried tomato herb spread. Fresh mozzarella. Arugula. Basil. Balsamic glaze.

Fresh ingredients rooted in Italian cooking, never overly processed shortcuts.

The idea was- what would happen if we took those flavors and used them to make an Italian-style American breakfast sandwich?

The first version I made was a winner because every component had already been tried and tested.

Crispy bacon, fried eggs with soft-set yolks, melted mozzarella, peppery arugula, and the spreads all came together to create a sandwich that’s fresh and layered with flavor.

And then there’s the balsamic glaze, which is Tyler’s favorite part. It adds just a little sweetness and gives the sandwich an extra layer of flavor without overpowering the other ingredients.

Honestly, I think this sandwich says a lot about what we’re doing at Tavva as a whole.

Some restaurants treat ingredient overlap as a compromise. We see it differently. If an ingredient is truly great, we want to find multiple ways to use it throughout the menu in ways that still feel exciting and intentional.

That’s also part of how we’re able to make food fresh on demand while still serving it incredibly fast. We’re not bringing in frozen premade sandwiches or heating up pre-assembled breakfast items. Like all our menu items, this sandwich is made from scratch with simple ingredients, fresh and on demand when you order it.

A sandwich that feels familiar and comforting, but layered with the kinds of flavors and fresh ingredients you normally don’t expect from breakfast on the go.
