A note from Val: The beginning of the Tavva menu
The Chicken Caesar Sandwich was the first official menu item for Tavva.
When we first started planning Tavva, the original idea was simple: Neapolitan pizza. That was it. We thought we were opening a pizza restaurant.
But as we kept working on the concept, Tyler and I found ourselves constantly going back and forth. Did we really want to be just another pizza place? Or did we want to go beyond pizza and do something new and different?
Those questions led to this sandwich.
At first, we had the idea to use our pizza dough as sandwich bread. We baked it, sliced it, and built the very first version of this Chicken Caesar Sandwich on top of it. The second we tried it, we both looked at each other and knew we had to put it on the menu.
Over the next several months, I kept testing recipes and refining every component. The pizza dough bread was good, but I didn’t want “good.” I wanted something people would think about later. Something worth coming back for.
The obvious choice was classic Italian focaccia.
The moment we started making fresh focaccia, everything clicked. The texture, the flavor, the crisp edges, the soft center– it completely transformed the sandwiches. We fell in love with it immediately and decided fresh focaccia had to become the foundation for all of our sandwiches at Tavva.
Once we had the focaccia right, the sandwich was finally ready for the menu.
The Caesar dressing is made fresh from scratch and packed with bold flavor. The chicken is parmesan-crusted and pounded thin so it stays incredibly tender and cuts like butter. Crisp romaine, shaved parmesan, crispy bacon, roasted garlic herb spread, and warm toasted focaccia bring everything together into a sandwich that’s fresh, flavorful, and satisfying in every bite.
This sandwich marked the beginning of Tavva becoming more than just a pizza restaurant, and I can’t wait for you to try it!
