A note from Val: The story behind our Tuscan Chicken Sandwich

Before going to Florence, I spent hours researching the best places to eat. I didn’t want to waste a single meal on anything mediocre. I wanted the best of Florence.

I found a sandwich shop with incredible reviews. It looked exactly like what you’d picture- small, charming, and packed with people. The kind of place you feel like you have to try. So I put it at the top of my list.

When we got there, it was raining, and there was a long line out the door of this tiny shop. I was so excited. I figured, if people are willing to stand in the rain for this, it has to be amazing.

We finally got our sandwiches. They looked incredible.

I took one bite… and I was immediately disappointed.

Honestly, it was one of the worst sandwiches I’d ever had. It felt like the biggest waste of time.

That experience stuck with me.

When we started thinking about sandwiches for Tavva, I knew I wanted the exact opposite of that. No long waits. No hype that doesn’t deliver. Just really good food, made fast, that actually lives up to how it looks.

For this Tuscan Chicken Sandwich, we were already using our pesto and sun-dried tomato spread in other dishes, and I knew they would taste great in a sandwich.

I added herb-grilled chicken, melted mozzarella, a handful of fresh basil chiffonade, and a drizzle of balsamic glaze, all sandwiched between our homemade focaccia.

Once we tried it, there was no debate. It was going on the menu.

Every bite was so fresh and flavorful- exactly what you’d want from an Italian sandwich.
